View Full Version : Home Made Dressing / Stuffing?

I'm looking at recipes and I don't know which to use.

http://www.cooks.com/rec/view/0,1739,155179-230207,00.html - I like this one because you can stuff the bird. But it doesn't have celery.

http://www.cooks.com/rec/view/0,1639,149190-249199,00.html - this one has celery, but no directions to stuff it.

Anyone else have a different recipe?

The one my mom makes has celery, onions, cream of mushroom soup (I think), chicken broth and bread. I don't know if I have the recipe or not. I wonder if I should make some on Thursday. I think I have everything I need. It's always the first thing we run out of at family dinners because it's so good.

I would just find a stuffing recipe you like and use that to stuff the bird. Then cook the extra for maybe a half hour in the oven. Mom's just starts getting brown but she does cook it on the stove a bit before it's stuffed.

I use store bought bagged stuffing and use the recipe on the side of the bag.....very similiar to the second one listed.

You can put it in the bird, but I always cook it separately. :)

We don't stuff the bird til right before it comes out of the oven, that way the bird cooks faster because we bake such large birds.

I always cook a smaller bird to make a pan of turkey and dressing out of. I bake a huge pan of cornbread 3 days before Thanksgiving and let it stale a bit, then I crumble it into a very large pot and use enough chicken broth and broth from the cooked turkey to make it very soupy, then add about 1/2 cup sage, onions, celery, and a couple cups of cooked turkey (shredded). The I cook it til it thickens a bit, remove it from heat and add about a dozen sliced hard bolied eggs and then pour it into a huge baking pan and bake it.

Hmmmm.....never heard of boiled eggs in stuffing.......but, I am sure it is awesome if you made it, Kelly!!!

My father in law used to do it, this isn't stuffing that goes in the bird, this is a pan of dressing as a side dish. He would cook a whole smaller turkey and make a pan of turkey and dressing and it as so good! I never have been able to get mine quite as good, but I am getting better. I have had it in restaurants here, but his was always better. I had never seen this dish up north, I think it's a southern thing.

I never tried stuffing my bird, we fry it ..don't think it would work :lol:

I put this on another thread on HCWT, but thought I'd add it here. The difference in mine is that I also use grits. Note that I saute the celery and onions in b utter, then add water and grits and cook until the grits are done. i then add this soft mixture into the breads and add additional broth. http://chatwithvera.blogspot.com/2011/11/lets-talk-about-thanksgiving-meals.html

Tara...mine is basically like the first one except I add celery and I substitute chicken broth for the water

Mine is cooked like Vera's but no grits and add a can of cream of mushroom soup.
